Backings
Listed in order of my preference

Rug Warp - 100% cotton.  Very even weave and the rugs stay straight.  Hook along a row for your outer edge.  When you steam, measure each of the diagonals and stretch the shortest until both are equal.  I buy 112" wide rug warp from Dorr Mill Store.  The extra width reduces the amount of waste.  My preferred backing.

Linen - The most expensive backing.  Not as soft as the 100% cotton backings.  Weave is a bit uneven, but my biggest complaint is that tiny hairs from the backing work their way up to the surface of the hooking.  This is a huge problem if you are hooking a dark rich background, such as eggplant, one of my favorites.

Monk's Cloth - Besides burlap, this is one of the most common backings that beginners will encounter because a majority of the commercial patterns are drawn on Monk's Cloth.  You will recognize it by the white fibers that run across the fabric.  The double weave of the cloth tends to catch on the loops as beginners pull them through.  It becomes very difficult to pull a wide cut if you insert your hook in between the fibers.

Burlap - Avoid this backing if you can.  Sure it's cheap, but your wool isn't.  I object to the order and scratchiness of the fabric.  The weave is often extremely uneven.  It doesn't sit as well on the Puritan Frame, my favorite frame.
